Try clarified butter for cooking, for a higher smoke point. Put a butter block in a glad bag and leave in a pot of hot water until melted. Chill in the fridge until solid, and then wash off the white milk solids.
8 boiled potatoes, mash with the following:
1 tsp garlic Westgold butter
1 tub cream cheese
1 tub cottage cheese
Mix all together and put into a oven proof dish. Sprinkle with cheese then cook until cheese is melted and golden.
