Ingredients

 

125g Cinnamon Butter, soft

½ c brown sugar

½ c caster sugar

2 eggs, beaten

1½ c flour

½ tsp mixed spice

½ c milk

1 tsp soda

1 c mashed banana

¼ c walnuts, chopped

½ banana, for top

Extra walnuts to sprinkle

 

Method

 

Preheat the oven to 170°C.  Grease and line a 25cm x 12cm loaf tin with baking paper.

 

Using an electric mixer, cream together the Cinnamon Butter and both sugars until light and fluffy.

 

Pour in the beaten eggs a little at a time until incorporated. 

 

Add the flour, spice, walnuts and soda to the butter mixture and mix on a slow speed, gradually adding the milk and mashed banana until all incorporated. Spoon into the prepared tin and smooth over the top.

 

Cut the banana in half longways and place 2 thin slices on the top and sprinkle with extra walnuts. 

 

Bake for 50-60 minutes.  Cool in the tin.  Remove from the tin, cut into thick slices and serve with extra cinnamon butter.
