Ingredients

 

125g red chillies

¼ C white wine vinegar

1 tsp salt 

1 Tbsp sugar

2-3 garlic cloves

¼ C water

½ onion, chopped

 

80g Westgold Unsalted Butter

1 tsp smoked paprika

1 tsp Worcestershire sauce

½ tsp garlic powder

Method

 

Cut the tops off the chillies and slice into 6 pieces. 

 

Place the chillies into a saucepan and add the vinegar, salt, sugar, garlic, water and onion. 

 

Cover and simmer them together for 10 minutes until they soften.

 

Transfer the mixture into a blender and puree until finely chopped. Then, pour the puree into a sieve and press it through using a ladle, leaving behind only the seeds and skins.

 

Discard the seeds. 

 

Return the sieved puree back into the blender. Add the paprika, Worcestershire sauce, and garlic powder.

 

Turn on the blender to its highest setting and add the butter in four portions, pureeing until smooth. Taste and adjust the seasoning as needed.

 

Pour the sauce into a jar and cover it. Store it in the fridge.

 

Note: The sauce maintains a spreadable consistency in the fridge. To use it, you can either remove it from the fridge and let it come to room temperature for about an hour or microwave it at 50% power for 30-60 seconds.
