Karen Burrows Whitebait Patties

You can't beat whitebaiting at your own stand then making patties with fresh whitebait on the pot belly right there on site. Although we don't all have that luxury, you can have an element of it by procuring some fresh or frozen whitebait and whipping up these delectable whitebait patties. So good on their own or sandwiched between two pieces of fresh bread and plenty of butter and a squeeze of lemon.

Tips with Butter

Westgold Butter whipped in a food processor turns out super white and light, to serve with that special meal.

Ingredients

500g Whitebait
2 eggs
Salt
Westgold butter for the pan

Method

Drain, dont wash, the whitebait
Beat eggs until fluffy (well mixed)
Add salt to taste
Add in whitebait and mix gently

Heat butter in the frypan so it's just coloured, not burnt.
Put spoonfuls of batter mixture in and cook until whitebait changes colour. Then turn.
Give it just enough time on the other side to cook it. 
Then enjoy with fresh lemon. Fabulous also with fresh bread and more butter slathered on.
