Susie and Isla Kwant's Christmas Chocolate Cake

Absolute decadence! And the butter icing; wowee. This rich, soft chocolately cake is a perfect option for a Christmas celebration that the children can contribute, and everyone will enjoy. A show stopper indeed. People, leave space for it in your tummy after Christmas dinner. The decorating and licking of the spatula are clearly the best parts!

Butter Quick Tips

Using unsalted butter in your baking is the best way to start. If you feel it needs a bit of salt, you can add it later.


2 cups sugar

3/4 cup flour

3/4 cup cocoa powder

1/1/2 tsp baking powder

1/1/2 tsp baking soda

1 tsp salt

2 eggs

1 cup milk

100g butter (room temperature)

1/4 cup vegetable oil

2 tsp vanilla essence

1 cup boiling water

Butter Icing
100g butter (at room temperature)

1/2 tsp vanilla essence

1 1/2 cups icing sugar

3/4 cup cocoa powder

1/1/2 tbls milk


Pre heat over to 180 degrees C
1. Sift flour and stir sugar, flour, cocoa, baking powder, baking soda and salt
2. Mix egg, milk, oil and vanilla
3. Add together, mix well
4. Stir in boiling water
5. Seperate mix into two pre-lined cake tines
6. Cook for 35 minutes

Butter Icing
1. Sift the icing sugar and cocoa powder
2. Add the butter, vanilla essence and mix thoroughly
3. Add milk slowly while mixing
Slather the cake in icing and then decorate with whatever takes your fancy; strawberries, candy cane, chocolate shards
