West Coast Whitebait Fritter

The West Coast is one place where they really know how to cook the Kiwi delicacy, Whitebait. This recipe adds a bit of class to an old classic. The citrus hollandaise and apple and red cabbage salad make the perfect accompaniment for a well-rounded starter or lunch to be served with a crisp white wine.

Tips with Butter

Try clarified butter for cooking, for a higher smoke point. Put a butter block in a glad bag and leave in a pot of hot water until melted. Chill in the fridge until solid, and then wash off the white milk solids.


1/2 lbs whitebait  
Salt and pepper to taste
2 eggs

Citrus hollandaise:
2 egg yolks
Juice from one lemon
250g melted Westgold butter
Salt and pepper to taste

Apple & red cabbage salad
1 apple shredded 
1 cup red cabbage shredded 
1/2 a red onion sliced
1 tbsp mayonnaise 
1 tbsp dijon mustard
Salt and pepper to taste


In a bowl mix the whitebait, egg, salt and pepper. Pour onto a preheated fry pan with oil and butter then cook for 2 minutes each side or until the egg set. Set aside whilst you make the accompaniments.

To prepare the hollandaise, whisk the egg yolk, add lemon juice then slowly add the melted butter until you get the right consistency. adjust the seasoning with salt and pepper.

Prepared the salad by combining all ingredients and gently toss.
