If you are searching to fill the kid's lunch boxes with something tasty, full of fruit and fibre, search no more. This muesli bar recipe ticks all the boxes, easy to make, healthy and you know it will keep your children going all day long. With the option of changing out different dried fruit or cereals, you can find your favourite combination or mix it up to keep it interesting.
Unsalted butter in your baking is the best way to start. If you feel it needs a pinch of salt, you can add it later.
1/2 cup sugar
1 cup flour
1 tsp baking powder
1 cup rolled oats
1 cup dried fruit (sultanas, raisins, chopped apricots or dates)
1 cup cereal (any combination of crushed weetbix, cornflakes, rice bubbles, muesli)
150g Westgold butter, melted
1 egg, lightly beaten
1 tbsp golden syrup
Preheat the oven to 180°c. Line a baking tin (approx 20 x 27cm) with baking paper.
Place all dry ingredients into a large bowl. Add the egg, melted butter and golden syrup to the dry ingredients and mix well. Press into a prepared baking tin and bake for 20 to 25 minutes or until golden.
Leave to cool in the tin, then slice. Keep in an airtight container
